Default Arroz con coco (Colombian Coconut Rice)

This is a bit time consuming but so worth it. Unlike South East Asian coconut rice, it's not sticky. I omitted the sugar, used jasmine rice and added coconut water (because I had both on hand). I DID have it with SEA curry though.

I'm going to try this and report back. The coconut milk I have has guar gum as a stabilizer. I'm driving by a big Asian market today and will try to find some without stabilizers.

Barring that maybe it's time I learned to make coconut milk from raw coconuts.
