I would say that if you are looking for good flower quality find a plant with an award. Here is an example:
Phalaenopsis schilleriana 'Jane' AM/AOS
This plant has been awarded for its flower quality. The bold capitol letters indicate the awrard (sorry if you already know all this)
Another good idea is to get a plant from a reputable grower. I have bought many good plants on ebay, but some growers send you a great plant every time. I don't grow phals so I'll let someone else tell you who those growers are.
As far as how the plant looks, that is very dependent on how you grow it. The levels of light and temperatures have a huge effect on how the leaves are shaped and mottled.
