I'm not sure if you're going to go through with using a 10 gal.
But whatever you use, make sure there's air movement I have a small fan in my setup, but my setup is bigger than a 10 gal in comparison.

Also, you could mist the 10 gal pretty easily. That will keep the humidity up. (If needed)

But I honestly recommend a 20 gal or more. I guess it depends on how many and how big your orchids are though. for instance, I would need something around 30 inches tall for my phal in bloom.

"Guessing" is not a great way to estimate light. What exposure is the window and is it obstructed?

One of the most common reasons (but certainly not the only one) for orchids not blooming is insufficient light.

You may or may not be watering enough. That depends in part on what media you are using. (Which is another bit of info that would be wise to provide.) How are you determining dryness of the media? If the plants are staying too dry too long that will also prevent spiking.

Most phals require a 10degree drop between day and night time temps to set spikes. Are yours getting that?

As Tschimm said, photos and more specific info detailing your current care regarding the specifics he mentioned would be the way to go.

A 10gal tank may not prove large enough. Many chids get far too large for such a small tank.

The window is shaded by an outside awning yes. One has moss and the others have bark for their soils. You're right i am probably not watering them enough. I am not sure where else I can put them. In the winter which is now for us. The house is set to 62F. They are in my kitchen which gets pretty chilly at night.
