The temp all the way at the top is dramatically different than the temp midway up. Usually the temperature where most of the orchids are mounted stays in the mid to upper 70's during the day and low to mid 60's at night. The humidity all the way at the top is much lower than anywhere else because its right next to the ventilation screen and automatic fan.
I trust my reader very much, its good quality Manix humidity temperature reader.
I take out water when the water level is too high. Other wise I just mist the entire tank down every morning till all the orchids have had a good drink. This is hand misting.
I bought this as an empty 20 gallon long fish tank. Then I had glass cut to make the door and bottom glass plate, and I made the ventillation screen from home depot window screen kit. And then I used expanding foam to make the background with drift wood in it and siliconed coco-fiber to the foam to make it look natural. Then added the orchids

What is a Psychrometer  How does it work & where are they found
I know mine are off but I still need some idea - at least I know they're on the lower end but how low??

Psychrometer is the type of hygrometer. I believe you can find it in the same shops, next to digital hygrometers. It is also possible to make one by yourself. But handmade psychrometer won't look as nice as manufactured one.
