Great pictures, especially that last comparison shot.

I've only just noticed how the 'spikes' that the flowers grow from are so oddly/thickly shaped. They don't look anything like standard Phals spikes to me.

Is that what the thing sticking up beside the cornu-cervi flower is?

Yes, that's an old spike that may or may not bloom again. I wait until the old spikes dry up before removing-just in case.
