No moss, just fir bark and coco husk chips
I tend to overwater so I stay away from moss

Most important for the roots are air, after is water. An orchid survive days, weeks or months (depend of species) without water but goo in Heaven after one day without air at roots. If you tendency is overwater maybe for the beginning is good to use LECA classic method in clay pots or S/H method.

I prefer; tree fern, charcoal, big chunk of perlite and stones mix.

Sphagnum moss is more better, if you don't use sponge rocs or polystyrene expanded in mix with coco husk chips, say goodbye anticipated to you plants.
One more think;
peat moss is not sphagnum moss

Ii agree with Nexogen. Fungus gnats show up when the media is old and breaking down. Simply using fresh media should solve your problems without all the extra frufru measures.
