The terminal leaf doesn't look necessarily different from other leaves. You just need to notice that the cane has stopped growing and no further leaves are appearing. There's no need to rush a rest period until you're certain your cane is done growing. e.g. picture 1 is a mature cane. picture 2 is still growing.

In terms of determining group without flowers, there are some that have characteristic features (e.g. the latouria, formosae) but yours are ambiguous. Could be in the dendrobium section (e.g. nobile) but could also be phalaenanthe or a number of other sections.
