Default Banana Cocoa Hemp Bread

I've been baking this stuff for years, have the recipe pinned down perfectly now.

Preheat oven to 350.

1 and 1/2 cups flour total (any combo is fine, just be sure to use some with gluten in it, or use xanthan gum)
-1/2 cup whole wheat
-1/2 cup spelt
-1/4 cup barley
-1/4 cup buckwheat
1/2 cup flax seed meal
1 tsp baking soda
3/4 tsp salt
3/4 cup packed brown sugar
-1 Tbsp stevia (optional)
1/2 cup butter
1 egg
4 bananas
1/2 to 3/4 cup yogurt/kefir/apple sauce
1 tsp vanilla extract
3 Tbsp hemp protein powder
1-2 Tbsp raw cocoa powder
Some cinnamon, nutmeg, ginger, poppy seed to taste.

Get 3 bowls
Mix all the dry stuff together in 1st bowl.
Mush up bananas and yogurt in 2nd bowl.
Beat butter/sugar/vanilla in 3rd bowl.
Add egg and beat again.
Alternate adding dry mix and banana mix to 3rd bowl.

Season baking pan with butter/crisco/spray.

Bake for 55-60 min in loaf pan until inserted knife is clean
-or-
Bake for 25 min in cupcake pan.

That should be it. Sometimes I like to add some raw honey to the top of the loaf before I bake it, gives it a nice sticky sweet topping.

Really is the best banana bread you will ever have. Feel free to substitute if you don't have all the weird stuff that we have here - it's pretty fun.

Hemp has a massive amount of protein and fiber and overall nutrition. I basically live off of that stuff!

Nutiva Organic Hemp Protein Powder

That's the stuff I use. Plus I eat a lot of shelled hemp seed. You can buy a 5lb bag of it off that same site, lasts me about 9 months. I try not to eat too much meat, and I can't stand soy, so there isn't much else. Even if I did like soy, I would much rather eat the hemp. Really is tasty stuff! Very easy to digest too.

Stevia I'm not such a big fan of - it's a little too bitter to me, but my GF makes me put it in there to regulate insulin spike from the brown sugar. Can't taste it if you don't use a lot of it, and it's pretty good for you.

You like stevia?

I just figured the hemp addition was so you didn't have to worry about leftovers as the "munchies" would set in. LOL
