Default Blueberry Dumplings

After reading Sue's thread on the Carmel Apple Cheesecake, I had to share another Paula Deen recipe I made a few months back - Recipes : Blueberry Dumplings : Food Network
What I did was soak the frozen blueberries ( the fresh ones were out of season and very expensive at the time) in blueberry schnapps over night ( substituting the 2 cups of water) which allowed the berries to thaw and soak in all that tasty goodness .. the alcohol burns away leaving an intense added flavor without having to add a lot of additional sugar .. (Of course, go by your own tastebuds to adjust the sweetness)
My next venture on this recipe is to substitute raspberries for the blueberries ..
Back to the liquor store for more schnapps

Hot steaming fruit and chewy little cakey dumplings served with a blob of cold vanilla ice cream or dollop of fresh whip cream is a fire and ice delight!

In fact when you eliminate the sugar .. and find it's not sweet enough for your palate .. a sprinkle of powdered sugar over the top will do the trick

Thought I would blow the dust off of this one .. making it this weekend for a small party at my brother's

If you don't want to click the link .. here is the recipe -
Blueberry Dumplings
Level-Easy
Yields - 8 servings
Total: 50 min
Prep -15 min
Cook - 35 min

Ingredients

* 1 cup all-purpose flour
* 1 tablespoon sugar, plus 1 1/2 cups
* 1 teaspoon baking powder
* Pinch salt
* 1/2 cup (1 stick) butter, softened
* 1/4 cup milk
* 1 quart fresh or frozen blueberries
* 2 cups water
* Vanilla ice cream or fresh cream, for serving

Directions

Stir flour, 1 tablespoon sugar, baking powder, and salt together into a medium bowl.
Cut butter into dry ingredients, using a pastry cutter or fork.
Add milk to form dough. Set dumpling dough aside.

In a large saucepan, combine berries, 1 1/2 cups sugar, and water and bring to a boil.
Drop dumplings into hot boiling berries by the tablespoonful.
Cover pot, reduce heat to low, and cook slowly for 20 to 30 minutes.
Do not remove the lid before 20 minutes has passed, and do not stir dumplings.
Serve warm with vanilla ice cream or fresh cream.
