Wow ! I guess we could really 'gourmet' this recipe if you added a bowl to the extensive list of ingredients hehe...as long as we're on bean subject...

actually made a bean soup today, here's a quick recipe

- dry beans soaked overnight - I had a mix of all kinds
- make good stock (best one would be on a smoked pork hock) but I made it on chicken bones, add celery stalks, carrots, and other vegetable that you'd like to see in your soup
- throw in the beans
- chop some onions, fry until golden - add to soup
- get some good smoked bacon - I got some double smoked from a local deli, I fried it until crispy and added the bits to the soup so they could release the smoky goodness
- add marjoram, salt pepper (+vegeta & Maggi if you're polish)
- boil/reduce until the beans are soft
- if the stock isn't strong enough I sometimes cheat with bullion cubes
- you can also add small chunks of potato

- This soup is excellent. This is a typical polish bean soup

I don't mind using baked beans in a can, but I always modify it in some way. So, yesterday for a picnic I added about a dozen strips of cooked bacon (cut into small pieces) and a medium onion, diced, to a large can of baked beans. Cooked that in the crock pot for three or four hours... That makes it a little nicer.

For a meal, I have grown fond of a nice loose sausage (we have a great sausage maker in town), browned and drained, plus some onion and maybe whatever else looks interesting in the refrigerator. That gets cooked with the beans for a few hours. It is a bit like chili, but not really.

I almost always add a little bit more brown sugar or molasses to the beans. I don't work with dry beans much, although I really should start doing that...
