Default A Twist On Twice Baked Potatoes

I'm not going to bore everyone with a complete recipe for something so simple. Suffice it to say that necessity is indeed the mother of invention, and great discoveries are often made by accident. While making a batch of twice bakeds recently I realized I was missing a key ingredient, namely the bacon. But I did have some pepperoni......... My wife took 2 to work for dinner and shared with a co-worker. I knew they were good, but they apparently made quite an impression on the co-worker. First time I ever got a thank you card for a potato!

Sounds like you came across a good idea. I find it fun to play around with recipes (unless the recipe is something that needs a very fine balance). If I don't remember to write something down and I don't cook it in a while, the next time I make a dish, it might turn out to be quite different so my family is usually in for a surprise. I also just like to throw things together. The only time my family was unhappy was when I made some very random asparagus casserole. They ate it but asked not to have it again. That's good as I have no idea what I put in it!

I tend to cook the same way. Even if I use the same ingredients there's no guarantee it'll taste the same as last time!

It is more fun that way! I was baking with my daughter and she wanted to know how exactly I made my cookies. So, I told her to watch closely as the measurements had to be very exact...then proceeded to use my hands to just scoop whatever it was. She got it. Now she experiments, too.

I'm not particularly a cook, so like to have fixed recipes. My hubby on the other hand always makes things up as he goes along, and will make some lovely dishes though substituting ingredients and just putting in the quantities that seem right at the time. I wish I had that skill.
