Default Ultimate Potato soup

Cool weather is on it's way and one of my favorite hearty soups is my Potato soup. Warning not for the weight watcher. It's a little bit of work but well worth it. and even better the next day.

8 cups diced potatoes
3 stalks celery, diced
2 med carrots, diced
1 cup chopped onion
3 (14.5 ounce) cans chicken broth,
divided
4 cups half-and-half cream
6 tablespoons butter melted
6 tablespoons all-purpose flour
4 cubes chicken bouillon
1/2 teaspoon ground black pepper



In a large pot, bring potatoes, celery, carrots and onion to a boil in 2 cups of broth. Cook until potatoes are tender, 15 minutes. Drain and reserve liquid.
Combine reserved broth and half-and-half in pot. In a bowl, combine melted butter and flour. Stir into half-and-half mixture over medium heat. Stir until thickened. Stir in reserved vegetables, remaining broth, bouillon and pepper. Heat through and serve.

I agree. There is nothing like soup on a cold day. I haven't made potato soup but we make quite a few others. I think the most time consuming to make is minestrone...all those veggies!

Minestrone is one of my favorites. Although I have never made it the way a Italian friend of mine makes. Unfortunately she's no longer with us.

Mmmmmm yum yum looks good to me. I gonna make this soon. It would be a great soup to eat after raking up all those fall leaves.

My wife doesn't care for creamed anything but she like this. You can garnish it how ever you like, cheese, parsley, hot sauce, and my favorite crumbled bacon.

I have a recipe that is much like this only uses velveeta in it. Very yummy. Also good when you add ham!!

it was really good - we can thoroughly recommend.
The only changes we made were to add a bunch of fresh thyme during cooking and to use home-made chicken stock. Also we replaced the chicken bouillon cubes with one vege bouillon cube.

...and it was made especially good by having it with garlic ( and thyme bread ). Yep - we really like fresh thyme !

We may also add leeks next time, but to be honest why mess with success

meant to add that we were going to liquidise the soup, but it is MUCH, MUCH nicer having it chunky !
