First batch for first time ever! And yes it makes quite a lot! I've made something similar but without the chocolate, in french we call it 'sucre à la crème', don't know the english term for it... But never fudge. This one looks yummy!

Before I forget, I thought nothing of the:

Apparently beating it takes away the gloss too and makes it a creamier looking fudge. Guess you can say you've had your workout for the day!

The taste is awesome but I made it a bit to soft. Aimed for 235 instead of 240... next time I'll try to aim for 245 in case...
But frozen keeps it firm enough! ^^

Too bad..... My thermometer shows 235 to be soft ball so I don't go much higher. But it takes long to get there (only medium heat) so I don't stop cooking the second it reaches that. I wait a minute or so still cooking on medium heat so it is at that temp for a minute maybe. Not sure I would go as high as 245 tho.

Maybe your climate or humidity has something to do with it, but I have made it yearly for over 30 years. Of course usually in winter when we have low humidity. Glad it tasted good!

Humidity is probably it...
I will try it again soon just to get it right... My coworkers will be pumped full of sugar! LOL!
Maybe cooking at a lower heat... My oven plate's might be too strong...

My stove top seems not as strong as some and it takes quite a while to get to temp, but it is bubbling the whole time. So yes, maybe a bit lower temp and longer cooking time could work. Have fun! I bet your co-workers love you!

I know it is not fudge but I have a really simple great recipe for rocky road brownies. Just let me know if you want it and ill post it.
