Thumbs up Cambodian style Roasted Chicken
coat inside and out 1 whole chicken with 4 Tbls of Oyster Sauce (found in most orientals stores).
layer bottom of roasting pan with 10 whole stalks of Lemon Grass.
add 1 cup oil.
on Medhigh heat on stove top or 350 in oven roast chicken with lid on pan turning 1/4 turn every 15 minutes for one hour.
last 15 minutes breast side down.
keep pan covered.
