The trick with sphagnum might be to not let it touch the shoots. That's what killed the shoot on my plant.

could be, I removed sphagnum from the front side of the cork and gave it to the back, to make sure nothing will go wrong... so it will not touch them

Call whatever you want to call and people know about this species will know what you are talking about. I prefer to call mine Euchile.

I don't use any moss on mine(mounted also). Winter rest is needed for the long term health of the plant but don't completely stop the watering in the winter. I still mist my plant once a week or once every 10 days in winter.

I did not ask you or anyone else to call their plant by a different name, you can call yours what ever you want. All I do is point out the correct and accepted name of plants that are posted here. This is for the users of this site so they can put the CORRECT and ACCEPTED name on their plants.

You're right but the problem with Taxonomy is that they change to often to always use the accepted name in practice. I do like the trent I see now as shown with Cattleya but that's a can of worms.
