Please tell me the difference between the Highland and Lowland varieties.

Of course, Wendy! Lowland ssp is higher, sometimes double the upland size, the same with the leaves. The upland flowers are darker and the lips are heavily veined, while the lowland is lighter and the lip veins less crowded.
