Is there some dendro phal that pulls out spikes on the sides of old bulbs?

Yes. Some of them can flower from old pseudobulbs that didn't flower before.

This dendro phal, is from a friend and blooms every year in this way, I am amazed because mine only take out a central spike. Will I ever have an inflorescence like this, or is this a special hybrid?

Some are more likely to do this than others. Older and healthier plants do this more often.
