I'd love to, but my two dogs are about all I can handle these days. And I often feel guilty working as much as I do, leaving them alone so much. Then, when I am home, my plants get so much of my attention that I'm surprised they (my dogs) haven't tried to destroy them while I'm gone!

I know this sounds dangerous, but still....my kitchen sink is about 7 ft. from my kitchen stove. I want to find a way to attach some sort of tubing from my faucet over to the pot on the stove, and be able to leave the water just dripping-so that I can have this steaming pot humidifying the room even when I'm out of the house, and the pot would not go dry, and, I wouldn't have to turn off the burner... Geeez, in writing this out I see it's not a good idea. BUT.

You're right--dangerous and not a good idea. There are commercial humidifiers available that are designed to be safe.

Not a good idea. Just get a diffuser and leave out the oil. Some of them go for six hours and you can just put it in the middle of your plants. Anything involving an unattended stove top is not a good plan.
