My Apple Blossom bloomed this past spring. It got good new growth through the summer and now has a new sheath and the appearance of two new rhizomes. Should I expect a winter bloom on the plant? And should I stop fertilizing?

Mine and several others I know of tend to bloom in spring. The sheath could take a while to develop flowers. You can carry on with regular care assuming you use a balanced fertilizer and feed regular but weak amounts.

I'm going to assume you have Jackfowlieara (Iwanagara) Appleblossom (one word) since no other Cattleya hybrid has a similar name. This plant should be able to bloom in any season, whenever a healthy new growth matures. As long as it is in active growth of any kind don't stop fertilizing, though fertilizer and water can be reduced somewhat if your winter conditions will be cooler and darker than summer was.

If you search on this forum or on the web, you will find lots of pics. It's a popular orchid. Look under Iwanagara Apple Blossom.
