Default Dug-up orchids?

Hello everyone,

When I think of a "dug-up" plant, I think of large trees/shrubs wrapped in burlap.
What is a dug-up orchid? (such as from Carter & Holmes)
Is it just a bare root or is it literally dug up from somewhere. If so, where would an orchid be dug up from?

When orchid seedlings are deflasked, they often go into community pots or typical nursery cell-trays until they are large enough to go into individual pots.

If you are willing to wait, plants "dug up" from the tray can be a great bargain.
