Sounds like a phalenopsis. I highly recommend checking out the forum on phalenopsis here. There's lots of helpful people and great information!
When a spike turns brown and dried up, the plant is ready to get rid of it. Feel free to trim it.
If you can, go ahead and post some pics of the orchid.
