There’s no one size fits all:
1st looks like a Cattleya type (could be wrong): they like open fast drying media. I have the best luck with coarse bark that dries fast (within a day or two) so that I can water every 1-2 days.
Phalaenopsis: if you can see the inpot roots you want to water when they turn silver. I think in your set-up, as soon as the moss approaches dryness, it’ll be time to give it a good soak. Mine are happiest when I have them set up so that they’re dry and in need of watering within 7 days. Longer than that and the roots aren’t happy, but I grow mine cool: 70s.
Vandas: when the leaves are folded the plant wants more water. I have a few growing bare root like yours. I soak them over night, every night, in a container of water. These really respond well to Kelpmax if you want to kick root growth up a notch: I give mine some every month or two and usually see new root initiation within a week.

Personally, I can make bark work for just about everyone but the Vandas, I do have to have different grades (coarseness) of bark. I rely on ambient temperatures and humidity so I have to vary my substrate and watering schedule to work with the conditions I don’t have control over. It might be possible to have everyone in the same substrate if you can tailor humidity and temperature to suit.
