Liza,

First of all, check the 'Cymbidium Alliance' forum and browse though the earlier postings for some immediate general cultural help and to become familiar with some of the terms. Check the culture section for Cyms too.

Without knowing how long you have had your plants and therefore how many years since they have bloomed, it is difficult to answer your question. Here are some quick questions to consider:
1) How long since they have been repotted? Every three years is the general rule of thumb.
2) Where are they growing? Low light inside the house or outside will keep most Cyms from blooming.
3) Are you fertilizing? Once a week, with a weak dose of a balanced fertilizer (20-20-20) as an example, or one application of 6-month slow release granules, is the minimum to use. There are other more complicated methods if you want to spend the time.
4) What is your drainage? Cyms need good drainage and roots will die if their feet are left in standing water 24/7.

Not really knowing what condition your plants are in I have found most of the time the following works.
(1) soak the plants with plenty of water
(2) Then mix up 2 table spoons of Epsom salts in a 5 lt. bucket and give each plant around a half a bucket.
(3) after that carry on your normal water feed program and stand back and watch the spikes come.

keep the faith some times they just sulk.

I live in coastal southern California and Cymbidiums grow really well here in our climate. Some of the conditions that they prefer are:

1) very bright light but not full sun
2) cool summer nights
3) plenty of water (don't let them dry out)
4) moderate fertilizer (time release works)
5) good air movement
6) cool winter (will tolerate down to 30's)

This is how I've been growing my Cymbidiums. They seem to be quite happy and I can't keep up with the repotting. I will post some articles about Cymbidiums on my blog (orchidpage.blogspot.com) as I get around to repotting and dividing them.
