Insane root growth no fertilizers or nutrients!

I was pretty shocked when i was inspecting today and i noticed the majority of my plants were putting out new roots and almost all of the roots on my bulbos have started new green tips on their old roots.
Especially since i grow with barely using any fert and using no root stimulants or anything like that.

I also spotted several new growths on some bulbos which i found rather awkward.
Shouldnt my plants be going dormant for the winter period? The sunlight in my country is greatly reduced now thats its turning winter and they dont get too much water either.

Seems like they went haywire

Another thing is that i spotted what appears to be fungus or something alike on some of my plants growing in sphag that are usually wet or moist.
It appears to be some kind of white spots on the roots and sphag but it rubs off a bit if you touch it.

Any ideas?
